A Note About Mushroom Popcorn"Mushroom" popcorn refers to popcorn that has much more of the ball-shapes than typical "butterfly" popcorn. Regular (butterfly) popcorn on average will have maybe 5% ball shapes.
According to many growers, 35-45% ball shapes would be considered "mushroom popcorn". However, we hold our farmers to a higher standard - our popcorn averages more than 65% ball shapes (usually much more).
When you purchase commercially produced caramel corn and see perhaps 80-90% ball shapes, such as Cracker Jacks, not only are they using mushroom popcorn, but they remove most of the non-ball shapes through extensive processing.
The method of popping also plays a large part in the percentage of "mushrooms". Commercial poppers are able to maintain the exact temperature needed, so home users may need to experiment a few times with their stove-top poppers to get the desired results.
